Recipe Wednesday-Ranch Potato Salad
I have heard that as you get older, your tastebuds begin to change. While that is true for me with many things (onions and pickles to name a few), I still have not found a taste for mustard. So with this as my dilemma, I have never been able to enjoy potato salad. (Just the few required bites, so that I don't seem rude). And since next week is the Fourth of July and potato salad will be out in abundance, I thought I would share with you this AMAZING potato salad that my aunt from Oklahoma made last year for my dad's 50th. It was flying out of the bowl! I only tried to make it once and while the "sauce(?)" was delicious, I didn't cook the potatoes quite long enought so there were a few "crunchy" ones. But people ate it anyway (probably just choking it down so as not to seem rude!) Well here it is:
P.S. I was hoping to share my sister famous preztel strawberry dessert, but couldn't get in contact with her for this blog!
Ingredients:
1 (1oz) powdered package of Ranch dressing mix
2 cups mayonnaise (I go for full fat, but you could probably use the light)
3/4 cup chopped green onion
1 pound of bacon slices (I just used the pre-cooked microwave kind)
5 pounds of unpeeled red potatoes (I like the butter reds, they have a good taste)
Directions:
1. Bring a large pot of lightly salted water to a boil. Add whole potatoes and cook until tender, 15 to 20 minutes (I should've went longer). Drain, run under cold water to cool, and chop into 1 inch cubes. Transfer to a large serving bowl and refridgerate until completely chilled
2. In a small bowl, stir together the ranch dressing mix, mayonnaise and green onion. (Here I only did 1 1/2 cups of mayo and 1/2 cup buttermilk, yum!) and green onion. Cover and refridgerate about 2 hours to blend flavors.
3. Wrap bacon in paper towels and microwave until crisp, then let cool. (or do as I did and just buy the pre-cooked bacon that is already cooled!)
4. Stir the mayonnaise mixture, crumbled bacon and potatoes together and serve!
Let me know if any of you try it! Also if you haven't guessed, I just got the picture from the internet, I know, false advertisement, but I it's hard to have a blog without a picture!

Adrenaline Kid
Ok, so a week or two ago Jackie had a blog about sometimes the dad is as bad as the kids. Well, I can definitely relate to her! Don't get me wrong, Colton has a super dad that loves him dearly, but when I opened this email, I instantly felt nauseaus (sp?). Here is Colton, my dear baby boy of barely 4 years of age, rafting down the Marias river in Colorado (with Class 3 rapids-I don't know what that means, but it sounds dangerous to a mom 963 miles away!). These pictures frighten me, not only because I would be scared, but also because I still think of him of my baby boy. Just to let you all know that I secretly contacted the rafting company and their minimum age is 4. And obviously he survived this taste of adrenaline, so I guess I need to chill a little bit and let him have his adventures (And pray a lot!). I am very excited to get him back the weekend after the 4th of July!!! Two more weeks, the countdown has begun!!!
I pray that the pictures make it look more intense than it really was!

Thursday sassy shoes on Friday-due to tech. difficulties
So these are my hot, hot shoes I will be sporting all weekend. Jesse and I decided it was time to get new furniture, and so the paint that is currently on the walls (deep wine red-that I love), does not go with the furniture or the look at all. So the joy of new furniture comes with the price of losing my favorite room. But I will share with you "the plan" of the new room, which needs to be painted by Monday because I will be leaving at 6:00 am on Tuesday (see previous post) and the furniture could be arriving sometime when I am gone. I know I could leave this task to Jesse and just return to a completely finished room, but I would not do that to him! Bye, bye my beautiful red, Hello neutral beige and brown. Oh well, it will probably be more appealing if we decide to rent or move. (Not that we have any plans now, we just want to be ready when God wants us to move-hopefully soon!) So here are our ideas, tell me what you think:
PS-if we hate the dark brown below the chair rail, we are just going to paint it beige. And as a person that has a paper that says I am an Interior Designer, this is very hard for me! Also the picture below is one that I snapped while we were moving stuff out so it normally does not look like this!
